Peppermint bark


So, I was planning to make a batch of peanut brittle this past weekend. As I was browsing through some recipes, I came across this recipe for peppermint bark. Now, I realize peppermint bark is a more of a Christmas thing and that it's barely November, but one look at the way Jason's face lit up at the mere mention of the stuff, and it was decided: the peanut brittle would have to wait.

I'd never made peppermint bark before, but it is super easy and quick. And did I mention delicious? It's doing a pretty speedy disappearing act from our countertop.

We rigged up a double boiler by putting a saucepan on top of a pot of boiling water, and used that to melt the white chocolate. From there, you just combine the white chocolate with crushed candy canes and peppermint oil (peppermint extract), and pour it onto a cookie sheet. Then, just chill it in the fridge for 45 minutes or so. I couldn't believe how easy it was!

i have been thinking of making this for christmas - or dipping pretzles in peppermint bark. hmm all the wonderful treats that the holiday brings. xo, kaileenelise

Yes, I was thinking the same thing! It would make a great holiday gift for friends or co-workers. Just make a big batch, and portion it into cute containers or plates, and voila!
